Sometimes called shell beans, these cranberry beans are not just beautiful to look at, they are delicious to eat. Great with pasta or sauteed with diced tomatoes cranberry beans have a unique slightly nutty taste. They make excellent beans in soups and stews.
For basic preparation, presoak beans overnight. Cover beans with water in a three or four-quart pan, bring to a boil and simmer for 15-20 minutes. When done, drain and season with salt and freshly ground pepper. They can be served hot with butter or olive oil, but are particularly good served at room temperature with olive oil, lemon juice and chopped fresh parsley. This is similar to the way beans are served in Italy as part of an antipasto tray and makes a great addition to a mix of cheeses, olives, and sausages for an appealing appetizer.

I know this is a useless review, because I haven't cooked them yet. BUT I can say they are dazzling, bright, large beans & I know they're going to live up to the Nuts.Com reputation! I have researched the latest & greatest way to cook beans. Salt the water for the soaking. Soak overnight. Drain them in a colander & rinse. Place in a pot to cook, covering with water and add salt. Toward the end of cooking, add a splash of vinegar. Recommend reading bean cooking at various recipe sites. Like how to avoid cooking for hours & beans are still tough, etc.
