Cranberry Beans

auto deliver details are shown in a tooltip

Sometimes called shell beans, these cranberry beans are not just beautiful to look at, they are delicious to eat. Great with pasta or sauteed with diced tomatoes cranberry beans have a unique slightly nutty taste. They make excellent beans in soups and stews.

For basic preparation, presoak beans overnight. Cover beans with water in a three or four-quart pan, bring to a boil and simmer for 15-20 minutes. When done, drain and season with salt and freshly ground pepper. They can be served hot with butter or olive oil, but are particularly good served at room temperature with olive oil, lemon juice and chopped fresh parsley. This is similar to the way beans are served in Italy as part of an antipasto tray and makes a great addition to a mix of cheeses, olives, and sausages for an appealing appetizer.

I never tried these before and used them to make bean and kielbasa soup with kale. The beans soaked and cooked beautifully and the soup was so tasty.

I added some of these to my InstantPot bean soup so that it was more than 15 or 16-bean. Cooked beautifully and tasted great.
