Red Kidney Beans

What’s not to love about red kidney beans? These hearty legumes are named for their red exterior and unique kidney shape but offer more than meets the eye. Kidney beans are a low-glycemic food that provides a rich source of plant-based protein, fiber, and iron. They’re a delicious staple of chilis and are equally excellent in salads, soups, and rice dishes. There should be a bag of kidney beans in every pantry!
How to Cook Red Kidney Beans
Soak the red kidney beans overnight. Rinse prior to cooking. To cook, place the kidney beans in a pan over the stovetop, and cover with water. Bring to a boil, and continue to boil for 10 minutes. Reduce the heat and simmer until cooked, about 45-60 minutes. Check for doneness. They should be soft all the way through.
