Puttanesca Dried Sauce Mix
Perhaps one of the more famous sauces in Italy, this puttanesca dried sauce mix gets its name from the ladies of the night, who would make it by throwing together leftover ingredients from the kitchen. Imported from Italy, this dried sauce mix features tomatoes, capers, olives and garlic. Saute it with olive oil and use it with chicken or pasta.
I was curious... but I was very pleased with the results. Instead of a tomato-based sauce (because the stomach just wasn't in the mood), I tried a white sauce, and I was so totally blown away! This dried mix is only a shadow of what a real puttanesca sauce should be. Drying all these ingredients loses most of the flavor. I had to add anchovy sauce (Asian markets), hot cayenne pepper, fresh garlic, olives and wine vinegar just to get the basic flavours in there. Store in a cool dry place. Refrigeration is not needed.
