Great stuff. I'm using it in my own gluten-free flour blend. Most commercial gluten-free blends contain potato starch. Potato is a nightshade and I am allergic to all of those nightshade plants. Tapioca flour works great as the starch in my flour. I also use it for thickening gravy, etc.Pamela, Grand Ridge, FL
