Great stuff. I'm using it in my own gluten-free flour blend. Most commercial gluten-free blends contain potato starch. Potato is a nightshade and I am allergic to all of those nightshade plants. Tapioca flour works great as the starch in my flour. I also use it for thickening gravy, etc.

Well this is the best. It is now apple pie time and it cannot be made without your tapioca flour to add to the wonder of the juices.

We use it in our bakery and it makes the best pie filling! No floury taste and a glossy filling. Better than homemade.
