Ground Ceylon cinnamon has a lower volatile oil content giving it a more subtle flavor than the common Cassia variety. Ceylon cinnamon is often referred to as “true cinnamon.” Any baker would benefit from keeping ground Ceylon cinnamon in his or her pantry.

This is my preferred form of cinnamon for its benefits, and this is an excellent quality product. It has replaced all of my cinnamon usage. It has a milder taste than cassia cinnamon, which is what is typically found in the spice section at stores.
