What Are Unhulled Sesame Seeds?
Upon harvest, sesame seeds remain embedded in their seed coat, also known as a "hull."� Most sesame seeds sold in North America are sold "hulled"�without the seed coating. Unhulled sesame seeds are consumed in Japan and are growing in popularity among natural food enthusiasts in the United States. Unhulled seeds have a crunchier texture compared with hulled seeds and may have a slightly more bitter flavor. For that reason, when baking something sweet that calls for sesame seeds, it's best to use hulled seeds.
