With a slightly sweet flavor and powdery, flour like consistency, this can be used as a partial flour substitute in a paleo diet.Janice, Brookline, NH
I'm just waiting for my English muffin tins, so I can make some Paleo muffins. Let you know later if they turn out.Susan, Iron Mountain, MI

Haven't baked with it yet but nicely packaged!Camille, Freindswood, TX
I used this flour to make rolled (strip) dumplings. It handles great and acted just like regular dough when I rolled it out. Very happy with this healthy alternative to wheat.MELINDA, Johnston City, IL

Cannot find it except in Italy. Even Zabars in Manhattan doesn't sell it nor even know what it is. If you lived in Italy, it is very big in Firenze. Corrados used to sell it but haven't done so for a few years. It is great but I love to make new I, simple, make a heavy paste with water, roll the size of a small meatball, flatten it about 1/4" and cook, both sides in a cast iron pan. It's ok if it burns a little. It's like Cynar, you either love it or hate it.Charles, Seaside Park, NJ
