Basic Amaranth

Recipe Ingredients:

Amaranth

3 c

Water

Cooking Directions: |
1.

Combine amaranth and water in a pot with a tight fitting lid.
|
2.

Bring to a boil, stir well, then lower the heat, cover, and let simmer for about 20 minutes, stirring occasionally.

During the last 5 minutes or so it will start to stick and will need stirring more often.
|
4.
|
The grains will absorb the water and bind together but still retain their shape.
|
5.
|
Use immediately or store in the refrigerator for up to a week.
