Dark Chocolate Florentine Cookies

Recipe Ingredients:
2 cups <a href="/nuts/almonds/sliced.html">Sliced Almonds</a>
2 tbsp all purpose flour
zest of 1 orange
3/4 cup sugar
1 stick unsalted butter, divided into 8 pieces
1/3 cup heavy whipping cream
2 tbsp honey
10 ounces bittersweet chocolate (60-70% is best) - Chopped into small chunks

Cooking Directions:
1.  Preheat your oven to 350 degrees F. Position your rack in the center of the oven.

2.  It is best to use a Non-Stick Florentine Pan, also known as a Muffin-Top Pan. This keeps the cookies from spreading in all directions when baking. Otherwise, line a heavy large baking sheet with parchment paper or a Silpat

3.  Stir the chopped almonds, flour and orange zest in a mixing bowl. Stir the sugar, butter, cream, and honey in a heavy-bottom medium saucepan over medium heat until the sugar dissolves. Bring the mixture to a rolling boil. Remove the pan from the heat. Stir in the almond mixture. Cool the batter for 20-30 minutes, stirring it occasionally. For each cookie, place 2 teaspoons of batter on your Florentine Pan or baking sheet, spacing evenly apart (remember, the cookies will spread). Flatten the batter slightly with a fork or your wet finger.

4.  Bake the cookies until they are lacy and golden brown, about 10 minutes. Gently place the cookies on a cooling rack and let them cool completely. Transfer the cookies to paper towels. Place a half candied cherry in the middle of each cookie.

5.  Stir the chocolate chunks in a double boiler over medium heat until the chocolate melts. Spread the melted chocolate over the bottom of all cookies. Allow to dry completely on cooling racks.
