History & Background of Beets
The beets we know and eat are actually the taproot portion of the beetroot plant. In North America, beets may also be referred to as table beet, garden beet or red beet. In addition to being consumed, baked, boiled and steamed, beets are commonly used as food coloring or medicinally. Betanin, which comes from beetroot, is industrially used to redden tomato sauce, paste, jellies, ice creams, breakfast cereals and more. In the Middle Ages, beets were used to treat conditions related to the blood.
