How to Prepare Cannellini Beans
Stovetop directions: Combine beans with water and a tiny bit of oil or stock. Bring the beans to a boil, reduce the heat, then cover and simmer until beans are tender, 30-60 minutes. Check the beans occasionally to see if they are covered with the cooking liquid. If there is so much liquid absorption and evaporation that the top of the beans becomes exposed, add very hot tap water to the pot to cover the beans.

I have made 2 batches of cannelloni beans as of last night. The first were chalky and didn't get tender despite a very long cooking. I was willing to let that slide since I hadn't soaked them. The 2nd batch I soaked overnight and cooked them in my Duromatic pressure cooker well past the suggested time. Several of the beans were not tender. Previously I received a gift of cannelloni beans from a competitor and they were tender and creamy. I ordered yours because they were reasonably priced and organic. My research tells me that tough beans are old beans. Maybe your supplier is at fault. In any event, I'm now in possession of over 3 lbs. of unsatisfactory beans.
