1) Carob Coconut Energy Bites
Serves 6 (2 bites each)
1/2 cup coconut flour
1/2 cup rolled oats
2 tablespoons carob powder
1/4 cup honey
1 cup pitted dates
2 tablespoons macaroon coconut
1/4 cup mini chocolate chips (optional)
1. In a food processor, combine all the ingredients (except the optional mini chocolate chips) and pulse until the mixture is well combined.
Then transfer to a storage container. If desired, gently stir in the mini chocolate chips, and refrigerate for 30 minutes for the mixture to firm.
Remove from the refrigerator, and then roll the mixture into 1-inch balls or blocks to form the bites.
Store the bites in the refrigerator for up to 3-4 days.
