Mediterranean quinoa

Recipe Ingredients:
1/2 cup red wine vinegar
2 tsp. olive oil
2 cloves garlic, minced
2 tsp. freshly ground pepper
1/2 tsp. salt
2 medium green bell peppers, chopped
1/2 cup chopped cucumber
1/2 cup kalamata olives, pitted and sliced
1/2 cup chopped red oinion
1/2 cup chopped fresh parsley
4 cups cooked <a href="/cookingbaking/grains/quinoa/white.html">quinoa</a>

Cooking Directions:
1.  In a glass jar with tight-fitting lid, combine vinegar, oil, garlic, ground pepper and salt. Seal and shake well.

2.  In a large bowl, combine bell peppers, cucumber, olives, onion and parsley. Mix well.

3.  Add vinegar mixture and toss to coat.

4.  Add <a href="/cookingbaking/grains/quinoa/white.html">quinoa</a>; stir gently but thoroughly to combine; serve. Serves 6
