Church Cashew Chicken Pasta

Submitted by: Rhonda

Recipe Ingredients:
2 cups cubed chicken( I use the pre-cooked Mesquite Chicken from Sam's Club)
3 cups uncooked tricolor spiral pasta
2 celery ribs diced
3/4 cup onion
1/2 cup diced green pepper ( I use red and green for color)
1 1/2 cups mayonnaise
3/4 cups packed brown sugar
1 tbsp cider vinegar
1 1/2 tsp salt
1 1/2 tsp lemon juice
2 cups cup <a href="/nuts/cashews/roasted-and-salted.html">Roasted and Salted Cashews</a>

Cooking Directions:
1.  Cook chicken breasts and let cool.

2.  Cook pasta according to package directions and rinse in cold water.

3.  Chop chicken and place in a large bowl. Add the pasta, celery, onions and peppers. In a small bowl, combine the mayonnaise, brown sugar, vinegar, salt and lemon juice; pour over pasta mixture and toss to coat. Cover and refrigerate at least 2 hours. Just before serving, stir in cashews.
