Kasha (Buckwheat)

Recipe Ingredients:
1 Cup buckwheat
1 egg
1 large onion chopped
1 Tbs. vegetable oil
3-4 Cups broth
salt and pepper to taste

Cooking Directions:
1.  Stir buckwheat & egg together. Heat large fry pan,add oil.When hot add buckwheat mix and stir until dry. (this stops buckwheat from turning into mush) Add fried onions.add broth enough to almost cover the buckwheat mixture. Cover & turn heat loe until broth is all absorbed. Makes several large portions Serve in place of potatoes. My family likes it as an entree.
