Large Pearl Tapioca (water to cover by about 1 inch)

Heavy or Whipping Cream
Cooking Directions:
1.
Place tapioca in a bowl and cover with cold water. Cover bowl and allow to soak until tapioca is swollen (several hours or overnight).
Drain tapioca and place in an electric crock pot. Pour the quart of milk over the tapioca and stir. Place lid on crock pot and turn the controls on LOW. Cook for 2 1/2 to 3 hours or until pearls look transparent and are bout 1/4+ inch in diameter.

Beat the 3 egg whites with 1/4 cup sugar until they form peaks. Set aside. (No need to clean beaters.)
Use the same beaters to beat the egg yolks with the 1/2 cup sugar and the vanilla extract. Remove about 1 cup of the hot tapioca from the crock pop and add to the cold beaten egg yolks. Stir well. Then add this egg and tapioca mixture to the remaining tapioca/milk mix in the crock pot. Stir well.

Now, very carefully, fold the set set aside egg whites into the tapioca in the crock pot. Place lid on crock pot and maintain the same LOW setting and heat for 1/2 hour to ensure that the eggs are brought to a food safe temperature.
Remove the tapioca from the crock pot and place in a bowl. Cool and then chill. You may opt to consider this the finishing point or you may wish to go one step further to arrive at "Tapioca Nirvana!"
Whip the chilled heavy cream till peaks form. Fold into cooled/chilled tapioca.

Refrigerate and serve with sweetened fruit such as strawberries, peaches, pineapple. Another suggestion is a little maple syrup with chopped walnuts. Some folks add semi sweet chocolate morsels just before adding egg whites to the cooking process.

To decrease the calories, you may substitute low-fat or no-fat milk for regular milk. You may also substitute and use 4 egg whites in place of 3 whole eggs. A frozen whipped topping may be substituted for the real cream and a sugar substitute may be selected.
