Cooking Directions: |

Heat griddle to 350 degrees Fahrenheit. Lightly coat griddle with spray oil. In a mixing bowl, combine dry ingredients (Low Carb Baking Mix, baking powder, and sweetener). Make a well in the center of the dry ingredients and add the eggs, water and vanilla. Mix with a fork or whisk until blended, approximately one minute.

Pour batter onto heated seasoned griddle. Cook until bubbles form on the raw side. Flip and continue to cook until steam stops rising from pancake, approximately one minute per side.

Serve warm with your favorite low carb filling.

Yields: 10 large crepes.
