water or 1 can chicken broth and water to total 4 1/2 cups

lg. onion chopped
2-3 Tbs.
butter
1 1/2 cups
Orzo pasta
1/2 tsp.
salt
1/2 tsp
pepper
1 tsp
garlic powder or garlic paste
parsley or parmesan to serve
Cooking Directions:
1.
Soak large handful of dried porcini mushrooms 1/2 hour before beginning this dish in 4 1/2 cups water or 1 can chicken broth and water to total 4 1/2 C. (Bring water/soup to boil in a container in microwave oven. Add the mushrooms and let sit 30 minutes.)

Put butter in large pan or pot
Add the onion and saute a few minutes
Add the ORZO = stir well to coat
Add salt,pepper and garlic

Add the mushrooms ( chop them) and their liquid
Bring to a boil
Turn to a fairly moderate simmer for 15 minute - stir now and then
Then turn up heat for about 5 min and boil rather briskly until they are very creamy and some liquid remains. ( like risotto)
Add parsley and parmesan and serve
