Preheat oven to 425. Grease or spray 8-inch square baking pan.

Sift dry ingredients together. Set aside. Whisk the egg, melted butter, and milk together. Stir in dry ingredients in a few rapid strokes.

Scrape into prepared pan and bake for 20 to 25 minutes or until a toothpick inserted comes out clean. Serve hot or cold.
Makes 9 Servings.

Variation: Pour the batter onto a hot, greased 10" cast iron skillet. Place over low heat on top of the stove and cook for 30 minutes.
