||Combine 1 cup beans and 2 cups water. Boil furiously, uncovered, for 10 minutes. Cover, lower heat and simmer for 1 to 2 hours, until tender. As salt can disrupt the cooking, it should not be added during soaking or the first hour of cooking.
Makes about 2 1/2 cups of cooked beans.
