Gluten-Free Chestnut Pancakes

Recipe Ingredients:
1 cup <a href="https://nuts.com/nuts/chestnuts/flour.html">Chestnut flour</a>
1/2 cup <a href="https://nuts.com/cookingbaking/grains/amaranth/flour.html">Amaranth flour</a>
1/2 cup <a href="https://nuts.com/cookingbaking/leavenerthickener/arrowroot.html">Arrowroot powder</a>
1 1/2 tsp Baking soda
1 1/2 tsp Cinnamon
1 1/2 cup Warm water
3 tbsp Canola oil
2 tbsp Maple syrup or honey
2 tbsp Lemon juice

Cooking Directions:
1.  In a large bowl, combine the flours, soda and cinnamon. In a small bowl combine the water, oil, syrup (or honey) and lemon juice. Stir into the flour mixture.

2.  Pour 1/3 C at a time onto a hot griddle. Cook until brown on each side.

3.  Makes 8 5" pancakes. These can be frozen and heated in a microwave for later use if desired.
