Gluten-Free Cornbread Mix Pancakes

Recipe Ingredients:
1 1/2 cups <a href="">Gluten-Free Cornbread Mix</a>
1 Egg OR
3 tbsp Egg Whites
3 tbsp Oil
1 1/4 cups Rice Milk
1/2 tsp Imitation Butter Flavoring (optional)
2 tbsp Maple Syrup (optional)

Cooking Directions:
1.  Mix all ingredients together until well blended. Batter will be a bit runny. Heat a nonstick pan on medium heat. Drop 1/4 cup of mix onto pan. Turn when you first start to see bubbles. They cook pretty quick, so don't walk away.

2.  Makes 12 pancakes.

3.  Serve as is or with maple syrup, powdered sugar or your favorite fresh fruit jam.
