Cream honey and butter, add egg and vanilla. Sift together flour, baking soda, powder, sugar and salt. Add to honey mixture.

Add nuts (optional) and butterscotch chips. Drop onto ungreased cookie sheet by the teaspoonful.

Bake at 350°F for 12 minutes. (They will puff up instead of spreading out - a moist cookie).
