Recipe for Kamut Raisin Walnut Muffins

Recipe Ingredients:
1 1/2 cups  Organic Kamut Flour
2 tbsp  Baking Powder
1 tsp  Sea Salt
1 tsp  Cinnamon
1 cup  Raisins (Unsulfured)
1/2 cup  Vegetable Oil
1/2 cup  Honey
Eggs (large, lightly beaten)
3/4 cup  Buttermilk
  Topping
1/2 cup  Organic Kamut Flour
1/3 cup  Walnut Pieces
1/4 cup  Sugar
1/4 cup  Butter, melted

Cooking Directions:
1.  Topping In a small bowl mix together all the topping ingredients; blend well and set aside.

2.  In a large mixing bowl mix together all the dry ingredients; stir in raisins, add oil, eggs, honey and buttermilk. Blend until just moistened. Fill greased muffin tin 2/3 full; sprinkle one heaping tablespoon of topping on each muffin.

3.  Bake at 350F for 15-18 minutes. Muffins are done when toothpick inserted in center comes out clean. Makes 18 muffins.
