Recipe Ingredients:

bunch each of fresh parsely, celantro, basil, and mint

cup crushed garlic

cup grated parmesan cheese

olive oil

lamb leg or choice cuts

Cooking Directions: |

Mix herbs, garlic in a food processor till well chopped. Transfer to a large ziplock bag add cheese and enough oil to mix well and cover lamb. Marinade over night.
remove lamb from bag and blot oil if necessary, pat some of the pesto over lamb add crushed nuts to cover the lamb. Roast to desired doneness.
