Quinoa with Peas and Onions

Recipe Ingredients:
1 pkg. frozen peas
1 1/2 Vadalia onions
1 cup <a href="/cookingbaking/grains/quinoa/white.html">quinoa</a> (uncooked)
butter and/or oil to carmelize onions

Cooking Directions:
1.  Cook <a href="/cookingbaking/grains/quinoa/white.html">quinoa</a> in 2 Cups of liquid (water or bouillion). Simmer for 15 - 20 minutes covered.

2.  Caramelize onions: Slice onions into 1/4-inch wide rings or chop onions. Heat butter or combination of butter and oil in heavy skillet. Add onions and a small amount of sugar (optional) and slowly cook over medium heat. Cook until onions are caramel colored, stirring often, 30 to 40 minutes. For more flavor, add a touch of vinegar at the end of cooking, stirring to deglaze the pan.

3.  Add frozen peas to onions and cook another 8 minutes.

4.  Add peas and onions to cooked <a href="/cookingbaking/grains/quinoa/white.html">quinoa</a>.
