Ground Ceylon cinnamon has a lower volatile oil content giving it a more subtle flavor than the common Cassia variety. Ceylon cinnamon is often referred to as “true cinnamon.” Any baker would benefit from keeping ground Ceylon cinnamon in his or her pantry.
