Our chlorella is the Vulgaris variety cultivated in a closed sterilized indoor facility in China. It is grown in heterotrophic tanks and has a thinner cell wall than chlorella grown in outdoor ponds. I made a cute lamb-shaped lemon-flavored cake for Easter and used the chlorella powder to color the "grass" around it. I mixed the chlorella powder with shredded organic coconut (purchased from nuts.com) and some water, and it worked out great! It was the slightly dark green I was looking for to make it look like a usual grass color. It did not taste bad; I am not sure there was much taste from the chlorella, though the coconut could have overpowered it if there was. I bought this product mainly because I figured I could use it as food coloring and it was certified gluten free. I have celiac disease and, admittedly, have become very untrusting of foods that are not certified gluten free or tested to be gluten free. I am not sure about some ingredients in normal food coloring, so I make my own coloring from fruit juice and products like chlorella powder (I actually prefer the added taste from this method of getting food coloring now). I had not been able to figure out a good option for this color green, but the chlorella powder was perfect for the "grass" around my lamb cake!
