Recipe Ingredients:

3/4 cup

Red Rice

1 cup

Lentils

1 cup

Green Beans (cut in bite sized pieces)

Carrots (sliced thin)

Red Pepper (seeded and chopped)

Medium Onion, Chopped
|
1 tbsp

Butter
|
6 cups
|
Chicken Stock
|
Cooking Directions: |
1.

Melt the butter in a pan and saute the onion until translucent. Add the red rice and stir until rice is well-coated with butter.

Add 2 cups chicken stock and bring to a boil.
|
3.
|
Stir in lentils and rest of stock. Let simmer for 1 hour.

4.
|
Add remaining vegetables and simmer until carrots are just barely tender.
|
5.
|
Serve!
