Organic Green Lentils
Organic and all natural Green Lentils. Cook in soups, stews, or by themselves. Makes for an extremely healthy side dish.
To cook beans on your stove-top, combine soaked or dried beans, water, oil or fat, and seasonings in a saucepan or pot of appropriate size. Bring the beans to a boil, reduce the heat, then cover and simmer until beans are tender. This takes 30 minutes to 3 hours, depending on the bean variety. Check the beans occasionally to see if they are covered with the cooking liquid. If there is so much liquid absorption and evaporation that the top of the beans becomes exposed, add very hot tap water to the pot to cover the beans. When dried beans boil, a foam forms on the top of the cooking liquid. This foam is water-soluble protein released from the beans and it will be absorbed back into the bean cooking liquid. It is not necessary to remove the foam. (To keep the foam down when cooking beans, add 1 Tablespoon of butter, drippings (consider flavor), or vegetable salad oil, for each cup of beans.)

I really like these because they make the best and tastiest veggie burgers. I used to buy veggie burgers at the market but they are so expensive and not all that tasty. Here is the recipe that I created for them: I measured 1/2 cup of lentils, rinsed and drained and added to a saucepan with one quart of filtered water. Simmer until they are fully cooked about 30 minutes then add about 2 cups of water.. Then add sliced carrots, cubed potatoes, chopped leeks, chopped brussels sprouts and diced celery. after the veggies are cooked, add 1/2 cup of quinoa flakes and simmer until done stirring constantly. Or turn off the heat and put a lid on it, the quinoa flakes will cook on their own. After this very thick soup is fully cooked, I take a masher and mash all the ingredients, then I place in into a refrigerator container for a few hours until the mixture cools. After it cools, you should have a thick dough like substance. By Tablespoonfuls, I form the dough into balls and roll them into organic rolled oats, flatten them out into patties and cook them on a well oiled cookie sheet in a 375 degree oven for approx. 35 minutes. ( I use rice bran oil which healthier than any other oil that I have tried.)Elise, North Arlington, NJ
