You don't have to soak it, it cooks quickly, it tastes great, and a little less than a cereal bowl full is very filling. The texture is awesome, too. I can't describe it, except to say that it is light, fluffy, and not chewy. Of course, it's not the cheapest grain you could buy (nor the most expensive), but for an American, organic grain, it's well worth the price. Oh, and if you get the 5 lb bag, it's resealable. I got 25 lbs of Kamut, and it just came in a clear plastic bag sealed with a zip tie. I resealed it with a twist tie. You don't have to do much to keep grain, so neither of those are problems. You just have to keep bugs and moisture out, and both bags will do that just fine.Braze, Phoenix, AZ
