Our cinnamon is harvested from the inner bark of tropical evergreen trees. The bark is peeled off in strips, which naturally curl up into cinnamon quills as they dry. Ground cinnamon is the powdered version of this bark. One cinnamon stick is approximately equivalent to one teaspoon of ground cinnamon.
The sweet and woody fragrance that cinnamon brings to beverages and dishes comes from the bark’s aromatic essential oil.
