  • 1 cup Jumbo Medjool Dates (about 10–12 large dates, pitted and chopped)

  • 1 cup Rolled Oats

  • ½ cup Organic Almond Butter (Lightly Toasted, Smooth)

  • ⅓ cup Milk chocolate chips

  • 1. Pit and roughly chop the Jumbo Medjool Dates. If they feel dry or firm, soak them in warm water for 5 minutes, then drain well.

  • 2. In a food processor, pulse the dates and almond butter until a thick, sticky paste forms. You may need to stop and scrape down the sides a few times.

  • 3. Add the rolled oats and pulse again until evenly combined. The mixture should hold together when pressed.

  • 4. Transfer the mixture to a bowl and stir in the chocolate chips by hand.

  • 5. Press the mixture evenly into a parchment-lined 8x8 inch pan (or smaller for thicker squares). Chill in the fridge for at least 30 minutes.

  • 6. Once firm, cut into squares. Store in the fridge for up to 1 week, or in the freezer for longer storage.
