Recipe for Berry Pecan Cornbread

Recipe Ingredients:
1/3 cup  Tofu (silken)
1 3/4 cups  Soy Milk
1/2 cup  Cranberry-Apple Juice
1/4 cup  Maple Syrup
2 tsps  Vanilla Extract
1 3/4 cups  Cornmeal
1/2 cup  Flour, Unbleached All-Purpose
1/4 cup  Potato Starch Flour
2 tsps  Baking Powder
1 tsp  Baking Soda
1/2 tsp  Salt
1/4 cup  Sesame Seeds
1 1/2 cups  Cherries (Dried or Tart)
1/3 cup  Pecans (Whole, Toasted)

Cooking Directions:
1.  Preheat oven to 350F.

2.  Blend tofu with next 4 ingredients with a fork.

3.  Combine with cornmeal, flour, starch, baking powder, soda and salt; mix well and set aside for 10 minutes.

4.  Fold in sesame seeds, dried cherries and pecans. Pour into an oiled loaf pan and bake 45 minutes.
