Cashew, Corn & Bacon Griddle Cakes

Recipe Ingredients:
2 slices Thick-cut smoked bacon
2 tbsp Minced Onions
1/4 cup Milk
1 tsp Dried Chives
3/4 cup Cashew Flour
1/2 tsp Baking Powder
6 Sun-dried Tomatoes, cut into thin slivers
1/2 cup Corn Kernels, frozen or fresh
1/2 tsp Salt
1/2 tsp Pepper
Red Pepper Flakes (optional)
1 Egg

Cooking Directions:
1.  Cut bacon in half. Arrange in a large frying pan in an X-shape. Saute until it is becoming crispy, turning as needed.

2.  Mix together minced onions, milk and dried chives.

3.  In separate bowl mix cashew flour, baking powder, sun-dried tomatoes, corn, salt, pepper and red pepper flakes.

4.  When onions are well moistened, stir in one egg and beat well. Add to dry ingredients and mix.

5.  When the bacon is crispy, spoon the batter into the hot grease in the pan, spooning the batter onto the four pieces of bacon to make four griddle cakes with a slice of bacon on top of each. When griddle cake is cooked halfway through, flip. When done, remove to paper towels to drain. Serve with butter, sour cream, syrup or just as is.
