Fruit Cake - The Best You Will Ever Eat

Submitted by: Marian

Recipe Ingredients:
1 box Seeded Raisins
1/2 lb Seedless Raisins
1/2 lb Currants
1 1/2 lbs Dates (cut up)
2 cups Sugar
3 cups Water
2 Large tbsp Crisco or Spry
2 tsp Cinnamon
2 tsp Salt
3 tsp Baking Soda
1 cup Cherry or Peach Jam
1 cup Applesauce
6 cups Flour
1 1/2 lb Mixed Candied Fruit (Cherries, Red and Green Pineapple - No Citron)
1/2 lb Walnuts (cut coarsley)

Cooking Directions:
1.  Mix together raisins, currants, dates, sugar and water and bring to a boil. Boil until soft, add one cup fruit juice (any kind is okay - orange, apple, grape).

2.  While hot add Crisco or Spry, cinnamon, salt, baking soda, cherry or peach jam and applesauce.

3.  When cool, add 6 cups flour, mixed candied fruit and walnuts.

4.  Pour into greased, waxed paper lined pan or loaf pans. Makes three (which freeze well). Bake at 325 for about 1 1/2 hours or until tester proves done.

    Cherry Jam Cherry Jam
Mrs. Miller's homemade cherry jam is bursting with the flavor of sweet and juicy peak-season cherries. It's sweet with just the right amount of tartness.

Ground Cinnamon Ground Cinnamon
Ground cinnamon is a widely used spice found in many desserts, chocolates, spicy candy, tea, hot cocoa, and liqueurs. It can also be used in pickling.
