Low Carb Pancake Mix Recipe

Low Carb Baking Mix

1 tbsp

Canola Oil
|

Eggs

1/2 tsp

Baking Powder
|

Packet of your Favorite Low Carb Sweetener
|
1/2 tsp
|
Vanilla
|
3/4 cup

Milk or Cream
|
Cooking Directions: |

Heat griddle to 350 degrees Fahrenheit. Lightly coat griddle with spray oil.

In a mixing bowl combine dry ingredients (Low Carb Baking Mix, baking powder and sweetener). Make a well in the center of the dry ingredients and add the eggs, milk or cream, oil and vanilla. Mix with a fork or whisk until blended, approximately one minute.

Pour batter onto heated, seasoned griddle. Cook until bubbles form on raw side. Flip and continue to cook until steam stops rising from pancake. Approximately 1 minute per side.

Serve warm with your favorite butter and "lite" syrup.
|

Yield: About 10 pancakes
