Mock Tuna Sushi Cucumber Roll

Recipe Ingredients:
1 cup Sunflower Seeds (soaked for 6 hrs, rinsed & drained)
1 stalk celery, finely chopped
1 stalk green onion, finely chopped
1 tbsp parsley, finely chopped
1 tbsp lemon juice
1 tsp soy sauce
1/2 tsp dill weed
1/2 tsp dulse flakes
2 whole cucumbers

Cooking Directions:
1.  Pulse the drained sunflower seeds 5 times in food processor. Scrape down and pulse again 5 times

2.  Place in a bowl, adding all remaining ingredients except for the cucumber.

3.  Peel cucumbers, cut off ends and cut each in half. using a spoon and paring knife, hollow seeds out from all 4 centers and stuff with mixture.

4.  Roll logs in black sesame seeds.

5.  Slice into approximately 1/2"-3/4" thick rounds and serve.
