Right Stuff English Muffin

Recipe Ingredients:
1 tsp Yeast, Active Dry
2 tbsp Warm Water
1 1/2 cups Water
2 tsp Sugar
1 tsp Salt
1 cup Organic 6 Grain Hot Cereal
3 cups White Flour, Unbleached
4 tbsp Almond Oil

Cooking Directions:
1.  Heat the 1-1/2 cup water to rapid boil and stir in right stuff cereal. Set aside and let cool to lukewarm.

2.  Dissolve yeast in 2 Tbsp. water in a small bowl. Wait 5-10 minutes to make sure yeast is active. Mix yeast mixture with right stuff cereal. Add sugar and beat into mixture. Pour mixture into medium bowl, cover with cloth and let dough rise for at least one hour, up to overnight.

3.  Stir down the dough. Beat in the oil, or another high quality oil. Stir in one cup of flour at a time with the salt. Beat in as much flour until dough is too thick to stir. Turn dough onto kneading board and knead more flour into mix, about 10 minutes. Grease inside of muffin rings. Place them onto lightly greased cookie sheet. Divide the dough into 8 parts and place dough into the rings. Allow dough to rise, not quite double.

4.  Bake at 350�F for about 15 minutes. Makes 8 english muffins.
