Freeze-Dried Spinach:
I didn't really want 2 pounds of the stuff and wish there were an in-between size, but I just love this spinach. It rehydrates almost immediately, and it's not all teeny-tiny flakes like that from other sellers. It really tastes fresh, and I add a handful or two to almost everything-marinara sauce, alfredo sauce, any kind of soup, scrambled eggs, even egg salad and tuna salad. Freeze-Dried Green Beans:

Freeze-Dried Carrots:
Scoured the internet for freeze dried carrots but until I found them on Nuts.com, I was having to use dehydrated carrots for my "Meals in Jars". That caused an extra step in the rehydrating process because everything else was freeze dried so I'd have to either separate the carrots or extend the soak time for everything. Thanks, Nuts.com.! Freeze-Dried Carrots:
Did you know that you're the only place I can find FREEZE DRIED carrots? I can find dehydrated carrots until the cows come home, but not freeze dried. And, I have to admit, when I first got them, they seemed like they were dehydrated and not freeze dried. But, they rehydrate really quickly which is why I need the freeze dried. I make meals in jars with primarily freeze dried ingredients. To have to wait an extra 10-15 minutes for the carrots is "nuts"! Thank you for this very wonderful product!!Heidi, Santa Ana, CA

Since it's hard to keep fresh veggies on hand, and I don't have much freezer space I thought I'd dip my toe into the world of freeze dried. I ordered corn, peas and carrots.
