Small White Beans
Small white beans may be one of the most common beans around, but don’t underestimate them! These plump oval-shaped beans are a low-glycemic food that provides a hearty source of B-complex vitamins, fiber, protein and iron. They are best known as the key ingredient in the signature dish, Boston baked beans. These tasty legumes also make soups, casseroles, stews, and chilis all the more delicious, and are a fantastic appetizer when served on garlic toast. Small white beans are perfect if you’re looking for a less meaty bean that still provides good flavor.
How to Cook Small White Beans
For basic preparation, pre-soak small white beans overnight. Cover the beans with water in a large pot, bring to a boil and simmer for 15-20 minutes. When done, drain and season with salt and freshly ground pepper.

My husband, the 'bean' person in our household, cooked these up as soon as we received them. He thinks they are great. He believes your beans are superior to anything in the stores - seldom a 'klinker'. Can't wait for you to get the cannellini beans back in stock!!!Bernadette, Bigfork, MT
