Chestnut flour is prevalent in certain regions of Italy. Some Italians use chestnut flour to make crepes, which are called necci, and are served plain or with ricotta and honey. Castagnaccio is a subtly sweet chestnut cake from Tuscany made of only chestnut flour along with pine nuts, raisins and rosemary.
