Date and Nut Bread

Recipe Ingredients:
2 cups Dates (about 24 large)
2 cups Hot Water
2 Eggs (Beaten)
1 cup Brown (or White) Sugar
3 cups All-Purpose Flour
2 tsp Baking Soda
2 tsp Baking Powder
1 cup Chopped Walnuts or Toasted Pecans
1 tsp Salt

Cooking Directions:
1.  Place 2 cups of water in microwave for 5 minutes. Fill a one pound container with the cut or chopped dates (or part with dried apricots). Pour the hot water over the dates/apricots and wait until almost cold.

2.  In a large mixing bowl at least 11 inches in diameter, place brown sugar (or white sugar) and chopped walnuts. Add the beaten eggs. Stir everything with a fork. Pour in the date and water mixture and stir well.

3.  In a separate bowl, place the flour, a pinch of salt, baking soda and baking powder. Stir with a fork. Dump the flour, salt, baking powder on top of the wet mixture and stir until all flour is incorporated.

4.  Pour mixture into two sprayed loaf pans and bake at 350 for about 40 minutes. Test with a toothpick. Let the breads cool in the pan. Remove from pans. I usually freeze them for about an hour and then I cut them into one inch slices and freeze.

5.  Excellent toasted and spread with cream cheese.
