                            | 1/2 cup | Butter (softened) |  
                            | 1 cup | Sugar |  
                            | 1 tsp | Baking Powder |  
                            | 1/2 tsp | Salt |  
                            | 2 | Eggs |  
                            | 1 1/2 cup | Whole Wheat Flour |  
                            | 1 cup | All Purpose Flour |  
                            | 1 cup | Diced Dried Figs |  
                            | 1/2 cup | Pine Nuts (Toasted*) |  
                            | 1 tbsp | Fresh Ginger OR |  
                            | 1-2 tbsp | crystallized ginger (diced fine) |  
                            | 1 | Egg White (slightly beaten) |  
                            |  | Coarse Sugar |  
                          | Cooking Directions:

                              | 1. | Preheat oven to 350F.  Lightly grease a cookie sheet.
Beat butter in a large mixing bowl with electric mixer on medium to high speed for 30 seconds.  Add 1 cup sugar, baking powder and salt.  Beat until combined scraping bowl sides as needed.  Beat in whole eggs.

                              | 2. | Beat in as much whole wheat and all purpose flour as you can with the mixer.  Stir in any remaining flours, dried figs, pine nuts and ginger.

                              | 3. | Divide dough in half.  Shape each portion into a 9 inch long roll.  Place rolls on cookie sheet, 5" apart.  Flatten slightly to 2 1/2" wide.  Brush with egg white, sprinkle with coarse sugar.

                              | 4. | Bake in preheated oven for 25-30 minutes or until wooden toothpick inserted near centers come out clean.  Cool on cookie sheet for 30 minutes.  Reduce oven temperature to 325 F.
Carefully cut each roll diagonally into 1/2" thick slices with a serrated knife.  Place slices, cut sides down on cookie sheet.
Bake in 325 oven for 10 minutes; turn slices over and bake for 10-12 minutes more, until dry and crisp.  Transfer to racks and let cool.

                              | 5. | To toast pine nuts:  Spread in single layer on cookie sheet and bake in preheated 350 oven for 5 minutes or until slightly golden brown.  Stir once or twice.  Cool completely.
