It’s a blend of select wheat varieties on the Italian and European market, to produce a flavorful crust. We recommend using 00 flour for American-style pizza. This flour is 12.5% gluten. The high quality protein and gluten content are optimal for a consistent dough.

I absolutely love this product. I have been making homemade pizzas for the past three years in a UUni pizza oven and sharing them with my neighbors. Now that I have switched to your 00 flour my neighbors absolutely love it. You have a customer as long as I make pizzas.
