How to Make Gluten-Free Pancakes
Additional ingredients: 1½ cups Gluten-Free Pancake Mix, 1 large egg, ¾ cup milk (dairy or alternative), 1 tbsp vegetable oil. Cooking Instructions: Combine Gluten-Free Pancake Mix, egg, milk and oil. Blend all ingredients in blender or whisk vigorously in bowl until thoroughly mixed. Let batter stand and pre-heat nonstick griddle to medium-high temperature.
Lightly oil or spray griddle with cooking or baking spray. For test pancake, pour scant ¼ cup batter onto griddle and cook until top is bubbly. Turn and cook until golden brown. Adjust temperature as needed. If necessary, adjust batter by adding more pancake mix or milk, one tablespoon at a time. Continue with remaining batter. Makes eight four-inch pancakes. Serves four (two four-inch pancakes per serving).
For waffles, simply add one additional egg and one additional tbsp of oil. There are approximately 3¼ cups per pound.

We have started having pancakes for dinner after we got our hands on this! Soooo yummy!! They're kinda thick, but the taste is terrific. (Our tip - add vanilla & lots of cinnamon...so good!)Rachael, Buellton, CA
