Organic Whole Wheat Flour is 100% stone ground from hard red U.S. dark northern spring wheat and has all of the nutritious bran and germ still intact. This is some of the best whole wheat bread flour you can purchase anywhere.
Wheatberry Pancakes
1/2 cup Organic Soft White Wheat Berries, 1/2 cup Water 1 1/8 cups Milk, 3 Egg Yolks, 3 Egg Whites, stiffly beaten, 1 tbsp Honey, 1 tbsp Melted Butter or Vegetable Oil, 1/4 tsp Sea Salt, 1/2 tsp Baking Powder, 1/4 tsp Baking Soda, 1/4 cup Whole Wheat Flour, 1 1/4 cups Milk.
Cooking Directions: Soak together the wheat berries and the 1/2 cup water for 12 hours or longer. When ready to use, drain and rinse soaked wheat berries. In the blender combine the soaked wheat berries with the milk and blend for 5 minutes. Add egg yolks, honey, melted butter, salt, baking powder, baking soda and flour to the wheat berry/milk mixture. Blend for 1 minute. In a bowl, beat egg whites until stiff. Transfer batter mixture from blender to a large mixing bowl and gently fold in the egg whites. Fry on medium hot griddle until bubbles are well-formed around edges of pancakes; turn and cook other side. Makes 6 pancakes.
There are approximately 3 1/2 cups per pound.

As I haven’t used this item yet I’m giving it four stars, but I fully expect that it will be excellent when I do. Based on previous orders. I’ve never been disappointed.
