Durum flour is an unbleached flour ground from the hard durum wheat. Durum flour is used for pasta, noodles, couscous and some specialty breads. Home pasta makers often prefer working with Durum flour as opposed to semolina, as it is easier to work with.

Durum flour makes more delicious bread than brown wheat flour. I like to purchase the 5lb bags. Only one pound bags were available. I hope to see the 5lb bags back in stock soon. If bakers could use the durum flour to make bread they would be converts.
