Ground cumin is used as a spice for its distinctive aroma, popular in North African, Middle Eastern, Western Chinese, Indian, Cuban and Mexican cuisine. Its distinctive flavor is due to its essential oil content. Cumin is used to season many dishes and is identified mostly with Indian and Mexican cuisine.
